NCNM Food as Medicine Institute – Ayurvedic Cooking: Spring Cleansing and Renewal

Learn the basics of Ayurvedic Cooking in this class on healthy, cleansing foods for spring. We will learn how to make a vegetable Kitchari, cilantro chutney and a non -dairy fruit parfait. Discussion and tasting will also include ghee, a clarified butter, that has many uses in Ayurveda to build strength and immunity (ojas). Kitchari (split mung beans and rice) is a full protein dish, and, when combined with seasonal vegetables and the proper spices, makes a healthy and easy meal.

Discover the best spices for each Dosha. Rhubarb is an optional fruit for the parfait and also has many healing benefits in the spring. Start the first weekend of May with the secrets to inner bliss.
